Chicken breast with Caesar salad

125 g chicken breast*
1⁄4 head leaf lettuce
15 g Parmesan cheese, grated
1 tsp capers
1 tsp anchovies
1 tsp mustard
1 tsp honey
1 1 tbsp oil
1 tablespoon white balsamic vinegar
75 g wholemeal bread
1 tsp pine nuts


  1. Preheat the oven to 200°C. Salt the chicken breast and sear it with oil on both sides. Place the chicken breasts in an ovenproof dish and cook in the oven for 20 minutes.
  2. Meanwhile, cut the whole wheat bread into small pieces and toast briefly to make croutons.
  3. Cut the head of lettuce and place in a large bowl.
  4. For the dressing, mix the capers, anchovies, mustard and honey with oil, parmesan and vinegar. Mix the salad and dressing only when the chicken breast is ready. This keeps the lettuce leaves crisp for longer. Then arrange on a plate and put the meat and croutons on top. Enjoy it!
