Couscous salad with smoked tofu

90 g couscous
100 ml soup
100 g smoked tofu
5 cherry tomatoes
1⁄4 cucumber
1 spring onion
6 walnuts roasted
1 tsp mustard
1 tsp honey
1 tablespoon oil
1 tsp white balsamic vinegar
1⁄2 bunch parsley


  1. Slice the smoked tofu and cucumbers.
  2. Bring soup to a boil and then add to couscous. Stir the whole thing and let it swell for 3 to 5 minutes.
  3. Cut tomatoes and green onion into small pieces. Place all ingredients, including the finished couscous, in a bowl. Chop the parsley and mix with mustard, honey, oil, balsamic vinegar, salt and pepper and the remaining ingredients.
  4. Finally, fry the smoked tofu on both sides in a little oil until golden brown and serve with the salad.
